Lievitomadre – The art of the pizza maker is located in the San Bartolomeo district in Scicli, with the splendid church acting as a scenic backdrop. The master pizza maker Maurizio Latina – with over thirty-five years of experience behind him – has chosen a cozy, intimate, familiar place, with all the tables placed around the oven in sight, and entering one immediately has the sensation of feeling a bit like in the home of our grandparents, intoxicated by the scent of wood that burned, crackling, in the stone oven.
In the era of gourmet pizzas and innovation at all costs, the choice of our pizza chef goes in the opposite direction, to the rediscovery of tradition, with healthy, poor but expertly processed ingredients: vegetables from the garden, the Scicli tomato. , ricotta, fresh sausage and local cured meats, capuliato are just some of the natural products that you will find on your pizzas.
The long-matured dough is created with mother yeast – and it couldn’t be otherwise – which guarantees greater lightness and digestibility of the pizza. The choice of prices goes against the trend.
